Few knew what sashimi, nigiri, ramen, and even karaoke were until Isao Kato ("Papa K") made his mark on New York City throughout the mid-1960s to late 1990s. His courage to leave Japan and bring sushi to 5th Avenue has set the standard for Japanese restaurants across the United States.
Papa K is a restaurateur, artist, and culinary trailblazer who has forever changed how Americans experience traditional Japanese cuisine and art.
Born and raised in Kitamoto, Japan, Isao left his home to pursue his dreams with his wife, Hiroko, in 1962.
He opened his first restaurant, Yamashiro, on 5th Avenue in 1966, laying the groundwork for Japanese cuisine in New York City. Being at the forefront of this cultural renaissance, he started paving the way for other Japanese American entrepreneurs when he was named president of the Japanese Restaurant Association in 1970.
The births of his children, Shingo, Kengo, and Chizu, are undoubtedly his three most treasured accomplishments during this timeframe.
In 1980, after a trip to visit his family in Japan, Isao - determined as ever - managed to travel back with six giant Karaoke machines. Shortly after, Yamashiro became the first-ever Karaoke bar in America.
Following the success of this innovative start-up, Isao was recognized in the New Yorker in 1984 for his creativity when he started making and selling highly sought-after sushi jewelry! Then, in 1990, he opened Kitamoto Restaurant, also in NYC.
He later spent his time at a quaint ramen cart in Greenwich, Connecticut, which he named Yatai Ramen, before retiring in Kitamoto in 2015. Papa K has played an instrumental role in Kengo's other ventures: Kengo Sushi & Yakitori, Kato Ramen, and Shobu by Kengo. His influences can be found in the beautiful brushwork and creative touches throughout the restaurants. He frequently visits from Japan, where he can be found greeting guests, helping in the kitchen, and enjoying time with his grandchildren.
